Two Cannabis-Infused Popsicle Recipes

INFUSED SIMPLE SYRUP

While standard simple syrup is an essential ingredient in all kinds of beverages, the infused version is particularly delightful. Mix up some of this and you'll be able to turn just about any dessert or drink into a DIY edible. Plus, you need this for those popsicles.

Ingredients

3 cups water

3 cups granulated sugar

3 tbsp vegetable glycerin

4 grams finely chopped cannabis flower

Bring the water to a boil in a medium pot. Then slowly stir in cannabis. Add the sugar and stir until dissolved. Cover the pot and cook for 20 minutes, but don't let it boil over. Uncover, add vegetable glycerin, and continue cooking for another 7 to 8 minutes, stirring constantly until thick.

Remove from heat and cool before straining into an airtight jar. Store syrup in the fridge to keep it fresh. And remember to test the finished syrup to get an idea of its potency.

INFUSED POPSICLES

All you need are two ingredients and a popsicle mold for this recipe. Remember, these summer treats are for the 21-and-over crowd only. Make sure to store them away from children and pets.

Ingredients

Fruit juice in flavor of choice (enough to fill the molds)

2-3 tbsp infused simple syrup, or to taste

1 cup heavy cream (optional)

1 tsp vanilla (optional)

Honey and Juice popsicle:

Combine heavy cream, vanilla, and simple syrup. Stir in juice. Pour into molds and freeze for ten minutes. Remove from freezer, then insert popsicle sticks. Return to freezer for a few hours until fully frozen. Enjoy!

1/2 cup honey or agave nectar

1 cup juice or puree of your choice

Popsicle molds

Instructions:

In a small saucepan, heat the cannabis-infused coconut oil and honey or agave nectar over low heat, stirring constantly, until the mixture is well combined.

Remove from heat and let the mixture cool for a few minutes.

Stir in the juice or puree of your choice until well combined.

Pour the mixture into Popsicle molds and freeze for at least 4 hours or until firm.

Remove the Popsicles from the molds and enjoy!
